INGREDIENTS: 250 gr. of flour, 2-3 eggs yolks, 90 gr. of sugar, 100 gr. of butter, 1 grated lemon peel, a pinch of salt, 250 gr. of Quattrociocchi black cherries jam!
METHOD:
With some dough make some long strips and add the edges all the way around the circumference of the cake trying to press them gently with your fingers at the base.
At this point, spread over the black cherry jam. With the remaining dough create the decoration that you prefer and bake your crostata in a preheated oven at 180°C/350°F for about 30 minutes until the edges are golden brown. Process the butter until it becomes soft and creamy. You can keep it out of the fridge or soften it in a saucepan. Place the flour and the sugar on a wooden work surface and add the eggs yolks, the grated lemon peel, the butter and a pinch of salt. Mix with your hands until you get a smooth dough! Refrigerate it for 30 minutes in order to make it more elastic and when it is ready keep some shortcrust pastry apart to use it for the edges and the decorations.
